Open the game, tap the gear icon, then "Restore purchases". Use the same App Store or Google Play account you bought with.
VIP is a weekly subscription. Cancel it any time in your App Store account (Settings > your name > Subscriptions) or in Google Play (Payments & subscriptions > Subscriptions).
Progress is saved on your device. Deleting the app deletes local progress; purchases can be restored.
